Easy Vortex Air Fryer Cheesecake w/ Raspberry Compote

Mix together the eggs, sugar and vanilla. Add your sour cream and cream cheese.  Beat until smooth. You can use a blender, hand mixer or do it by hand. Easy Vortex Air Fryer Cheesecake w/ Raspberry Compote Pour into the ramekin and put in a pan with a half-inch of water.  Bake for 7 minutes. Meanwhile, add the raspberries, sugar, lemon juice and water to a pot, stir and bring to the boil. Allow it to boil for about 5 minutes, stirring often to stop it from scorching. Easy Air Fryer Cheesecake with a sweet and creamy Raspberry Compote.

Equipment

Ingredients  

  • 8 ounces cream cheese 1 package
  • 2 eggs
  • ¾ cup sugar
  • ½ teaspoon vanilla
  • 2 tablespoon sour cream

Raspberry Compote

  • 1 ¼ cup raspberries fresh or frozen
  • ¼ cup sugar
  • 2 tablespoons water
  • 1 tablespoon cornstarch + 1 tablespoon of water

Instructions 

Cheesecake

  • Preheat the air fryer to 350°F on BAKE.
  • Mix together the eggs, sugar and vanilla. Add your sour cream and cream cheese.  Beat until smooth. You can use a blender, hand mixer or do it by hand.
  • Pour into the ramekin and put in a pan with a half-inch of water.  Bake for 7 minutes.
  • Check the cheesecake, it should be a little brown on top and firm. If not, put back in for a few minutes.
  • Let cool and serve with raspberry compote.

Raspberry Compote

  • Combine raspberries, sugar, and 2 tablespoons of water in a small saucepan. Bring to a boil and mash the raspberries using your spoon.
  • While boiling combine cornstarch and water, then pour into the raspberry mixture.
  • Let simmer for 5 minutes or until sauce has thickened.
