Vortex Air Fryer Lemon Sugar Cookies
These tasty cookies are easy to make and can be ready in a few minutes!
In a large bowl or stand mixer, cream butter and sugar for 4 minutes until light and fluffy. Add eggs, vanilla, lemon juice, and lemon zest and stir to combine. Stand mixers make this easy!
Stir in flour, baking powder, baking soda, and salt and mix just until combined. Needs to be stiff like dough – not runny.
Roll dough into balls and drop on trays.
Bake for 5-7 minutes. Sprinkle with sugar or white sparkling sugar.

- 1 cup cold butter cut into cubes
- 2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ tablespoon lemon juice
- 1 tablespoon lemon zest
- 3 cups flour
- 1 ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
Instructions
- Preheat air fryer to 350°F on BAKE. Line the air fryer basket with tin foil on the bottom.
- In a large bowl or stand mixer, cream butter and sugar for 4 minutes until light and fluffy. Add eggs, vanilla, lemon juice, and lemon zest and stir to combine.
- Stir in flour, baking powder, baking soda, and salt and mix just until combined. Needs to be stiff like dough - not runny.
- Roll dough into balls and place six into the air fryer basket.
- Bake for 5-7 minutes. Repeat with remaining dough.

The recipie is absolutely delicious. I had blueberries to use up, and ginger, so I added a few variations but really loved the way they tasted from the beginning. However, I cannot get air fryer cookies to come out looking decent. Love to know any secrets. The air seems to smush them together. If I put them in a foil pan on top of the air fryer tray, it blows around. It looks like your photo has them on a cookie sheet. I resorted to the oven and a baking sheet after all so they would be presentable!
Hi Paula, The only “secret” we have is that these cookies were made in the vortex plus air fryer, in which a baking sheet does fit! I am glad they still turned out delicious for you but sorry you couldn’t make them in the air fryer!
