Preheat air fryer to 350°F on BAKE. Line the air fryer basket with tin foil on the bottom.
In a large bowl or stand mixer, cream butter and sugar for 4 minutes until light and fluffy. Add eggs, vanilla, lemon juice, and lemon zest and stir to combine.
Stir in flour, baking powder, baking soda, and salt and mix just until combined. Needs to be stiff like dough - not runny.
Roll dough into balls and place six into the air fryer basket.
Bake for 5-7 minutes. Repeat with remaining dough.
