What is a Hasselback Potato?

The word Hasselback hails from a Swedish restaurant ‘Hasselbacken’ where the technique was created by slicing through a potato nearly to the bottom yet still keeping the potato whole. Then it is seasoned and baked. This Hasselback potatoes air fryer recipe is even better than the baked version.

Ingredients in Air Fryer Hasselback Potatoes

Potatoes – Any variety will do, but small round golden potatoes or baby red potatoes will produce a more dramatic presentation. Thicker fingerling potatoes of any color are also good choices as long as they can be sliced without falling apart. Small, sweet potatoes can be air-fried ‘Hasselback-style’ as well.

Flavoring – Olive oil spray gives each slice the perfect touch of crispiness. Leftover melted bacon grease or butter are good substitutes as well.

Seasonings – Any savory seasoning blend like garlic powder or onion powder, rosemary, seasoned salt, black pepper, or a blend like Ranch, Italian, Cajun, or lemon pepper depending on the main dish!

Toppings – A sprinkle of parmesan cheese, bacon bits, or chopped chives will add color, crunch, and flavor to Hasselback potatoes!

How to Make Air Fryer Hasselback Potatoes

  1. Slice potatoes thinly from one end to the other (per recipe below) taking care not to cut all the way through.
  2. Spray them with cooking oil and place them cut side up in the air fryer.
  3. Cook until crisp and golden brown.

Tips & Tricks

  • Microwave the potatoes for a minute to soften them up. This makes for easier slicing and faster cooking!
  • For even and easy slicing, place the potato on a cutting board lengthwise between two wooden spoons or chopsticks to keep the base intact.
  • Once cut, Hasselback potatoes can be soaked in cold water for about 15 minutes to remove excess starch. This will make them extra crispy on the outside!
  • For an extra cheesy side dish, sprinkle shredded cheddar over the cooked Hasselback potatoes and place them under the broiler until the cheese is melted and bubbly.
  • Keep leftover Hasselback potatoes in a covered container in the refrigerator for up to 4 days and reheat them in the air fryer.

Mini Air Fryer Hasselback Potatoes

Golden and crispy these mini Air Fryer hasselback potatoes are the perfect side dish.
Prep Time 5 minutes
Cook Time 10 minutes
Servings 4

Equipment

Ingredients  

  • 1 pound small golden potatoes (about 1.5" long)
  • olive oil spray

Instructions 

  • Slice each potato ~10 times, making sure not to cut all the way through the potato. You want to have no larger than ¼” slices that go no more than ¾ of the way through the potato. 
  • Add the potatoes cut side up to the air fryer (make sure not to overcrowd the air fryer basket) and spray them with olive oil spray. Season as desired (see notes for flavor suggestions). 
  • Cook at 400°F for 10-12 minutes or until the potatoes are crisp and golden brown. Serve warm or store in an airtight container in the fridge for up to two days. 

Notes

Serving Suggestions 
  • Ranch: Sprinkle a pinch (about ¼ teaspoon) of dried ranch seasoning over each potato in Step 2. 
  • Garlic Parmesan: Combine ½ cup grated parmesan and ¾ teaspoon garlic powder in a small bowl. Top each potato with 1 teaspoon of the mixture in Step 2. 
  • Plain: Sprinkle a small pinch (about ⅛ teaspoon) of kosher salt over each potato in Step 2. 
These potatoes will keep in the refrigerator for up to 4 days.
