Ingredients

Beets – Buy fresh whole beets that are free of soft spots, and are of a uniform size for even cooking. You can usually find beets with the greens still attached, which make tasty cooked greens sautéed in bacon drippings or butter.

Oil – Use extra virgin olive oil for the best flavor (or whatever you have on hand).

Seasonings – Beets have so much flavor they don’t need much in the way of seasoning other than basic salt, pepper, and butter. Give them a dash of balsamic, red wine, or apple cider vinegar if you want a little zing. You can also garnish with sour cream and fresh dill if you wish.

How to Cook Beets in the Air Fryer

  1. Scrub beets, then peel and cut into wedges.
  2. Toss with oil, salt, and pepper (per the recipe below).
  3. Place in a single layer in the air fryer basket and roast until fork tender.

Toss with butter and serve hot with beef, pork, or roasted chicken.

Tip & Tricks

  • Wear gloves and an apron and be careful while handling beets, as they stain hands and fabric.
  • Do trim the ends, but peeling is optional. Beets have a very thin skin that will virtually disappear during roasting.
  • Store leftovers in a zip bag in the refrigerator for up to 5 days, or in the freezer for up to 6 months.

Air Fryer Beets

Air Fryer beets are a colorful, healthy, and easy to make side dish.
Prep Time 5 minutes
Cook Time 22 minutes
Total Time 27 minutes
Servings 4

Equipment

Ingredients  

  • 4 medium beets about 1 lb
  • 1 ½ tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon butter

Instructions 

  • Peel the beets and cut them into ½-inch wedges. (Use gloves to protect your hands from staining).
  • In a large bowl, toss the beets with oil, salt, and pepper.
  • Place the beets in a single layer in the air fryer basket and cook at 380℉ for 22 to 26 minutes, shaking the basket occasionally.
  • Once fork tender, toss the beets with butter.

Notes

Leftover beets will keep in the refrigerator for 5 days and in the freezer for 6 months.
