Instructions
Peel the beets and cut them into ½-inch wedges. (Use gloves to protect your hands from staining).
In a large bowl, toss the beets with oil, salt, and pepper.
Place the beets in a single layer in the air fryer basket and cook at 380℉ for 22 to 26 minutes, shaking the basket occasionally.
Once fork tender, toss the beets with butter.
Notes
Leftover beets will keep in the refrigerator for 5 days and in the freezer for 6 months.
