Ingredients and Variations

Potatoes – Red potatoes have less starch than their yellow counterparts and thin skin that doesn’t require peeling. Choose potatoes roughly the same size or cut them so they are uniform to ensure even cooking.

Oil – Olive oil, coconut oil, vegetable oil, and avocado oil are great for seasoning air fryer red potatoes. Bonus if you have leftover bacon grease to toss the potatoes in, giving them a smoky, salty, bacon flavor.

Seasonings – Any Italian seasoning will work. Ranch seasoning, taco, chili, and Cajun seasoning make air fryer red potatoes a new recipe every time! Make your own seasoning with a variation of garlic powder, onion powder, rosemary, cayenne pepper, chili powder, or black pepper.

Variations – Fingerling potatoes, small Yukon gold potatoes, baby potatoes, and even sweet potatoes can be used. Try making roasted potatoes with russet potatoes. If using russets, soak in cold water to remove some of the starch for fluffiest potatoes.

Instead of seasoning, toss potatoes in ranch dressing. Sprinkle on parmesan cheese for a flavor boost.

How to Air Fry Red Potatoes

  1. Preheat the air fryer to 400°F.
  2. Pat potatoes dry with paper towels and cut into cubes and season as directed in recipe below.
  3. Cook in the air fryer for 10 minutes and shake the basket.
  4. Cook another 8-10 minutes or until the potatoes are tender and the skins are crisp. Season before serving hot.

Pro Tips & Tricks

  • Shake potatoes with oil and seasonings in a zippered bag instead of a bowl. Simply toss the bag or store leftovers in it!
  • Don’t overcrowd the air fryer otherwise, the potatoes won’t get a crispy skin all the way around. Make air fryer roast potatoes extra crispy by transferring cooked potatoes to a baking sheet and popping them under the broiler for a minute or two.
  • Keep leftover air fryer red potatoes in an airtight container for up to 3 days or freeze in zippered bags for up to 6 weeks. Reheat in the air fryer with a little spritz of cooking oil to make them crispy again.

These air fryer red potatoes have a hard to resist crispy exterior and a warm and fluffy inside.

Equipment

Ingredients  

  • 1 ½ pounds red potatoes unpeeled, cut into 1" chunks
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions 

  • Preheat air fryer to 400°F.
  • In a bowl drizzle potatoes with olive oil. Sprinkle Italian seasoning, garlic, salt, and pepper over potatoes. Toss to coat.
  • Spread the seasoned potatoes out in the air fryer basket.
  • Air fry the potatoes for 10 minutes. Toss the potatoes in the basket to ensure even cooking. Continue cooking for an additional 8-10 minutes, or until the potatoes are tender and starting to crisp.
  • Once cooked, season the potatoes with additional salt and pepper to taste.

Notes

Leftover red potatoes will keep in an airtight container in the refrigerator for up to 3 days. They can also be frozen and will keep in the freezer for 6 weeks.
