In a bowl drizzle potatoes with olive oil. Sprinkle Italian seasoning, garlic, salt, and pepper over potatoes. Toss to coat.
Spread the seasoned potatoes out in the air fryer basket.
Air fry the potatoes for 10 minutes. Toss the potatoes in the basket to ensure even cooking. Continue cooking for an additional 8-10 minutes, or until the potatoes are tender and starting to crisp.
Once cooked, season the potatoes with additional salt and pepper to taste.
Notes
Leftover red potatoes will keep in an airtight container in the refrigerator for up to 3 days. They can also be frozen and will keep in the freezer for 6 weeks.
