Slice each potato ~10 times, making sure not to cut all the way through the potato. You want to have no larger than ¼” slices that go no more than ¾ of the way through the potato.
Add the potatoes cut side up to the air fryer (make sure not to overcrowd the air fryer basket) and spray them with olive oil spray. Season as desired (see notes for flavor suggestions).
Cook at 400°F for 10-12 minutes or until the potatoes are crisp and golden brown. Serve warm or store in an airtight container in the fridge for up to two days.

Serving Suggestions
Ranch: Sprinkle a pinch (about ¼ teaspoon) of dried ranch seasoning over each potato in Step 2.
Garlic Parmesan: Combine ½ cup grated parmesan and ¾ teaspoon garlic powder in a small bowl. Top each potato with 1 teaspoon of the mixture in Step 2.
Plain: Sprinkle a small pinch (about ⅛ teaspoon) of kosher salt over each potato in Step 2.
