Air Fryer smashed potatoes are a crispy and delicious side dish.

Ingredients  

  • 1 pound baby potatoes washed and dried
  • 2 tablespoon olive oil
  • ½ teaspoon crushed rosemary
  • 1 tablespoon parmesan cheese grated
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions 

  • Preheat the air fryer to 400°F.
  • Place the potatoes in the air fryer basket and cook for 10-13 minutes or until fork-tender.
  • Using the bottom side of a measuring cup or glass gently smash the potatoes.
  • In a bowl, gently toss the smashed potatoes with oil, rosemary, parmesan cheese, salt and pepper.
  • Return to air fryer basket and cook for 10-15 minutes or until the potatoes are crispy and golden.

Notes

Leftover potatoes will keep in the refrigerator for up to 4 days and in the freezer for 1 month.
