Ingredients and Variations

Chicken – Choose drumsticks that are fresh with intact skin. While you can cook drumsticks from frozen, the breading won’t adhere evenly, so for perfect results, thaw drumsticks first. Chicken thighs can also be used well.

Buttermilk – Few kitchens have buttermilk on hand, but here’s why it’s important for fried chicken: buttermilk gently tenderizes the chicken without letting it become tough and chewy. If you don’t have any buttermilk, simply add 1 tablespoon of lemon juice or vinegar to 1 cup of milk (whole or 2%). This creates a mildly acidic liquid similar to buttermilk. Easy peasy!

Seasoning – A dash of hot sauce or buffalo sauce along with salt, pepper, and seasoned breadcrumbs creates a perfect balance of flavor for fried chicken. However, you can create a signature seasoning blend by whisking in a store-bought BBQ seasoning or make your own with spices like paprika, garlic powder, onion powder, and black pepper. try a spice mix like adobo, lemon pepper, or Italian seasoning.

For a low-carb or gluten-free option, try swapping the bread crumbs and Panko for crushed pork rinds.

Tips & Tricks

  • Always preheat the Air Fryer before making fried chicken. This ensures a crispy coating on the outside and juicy, moist chicken on the inside.
  • Avoid overcrowding the Air Fryer so the hot air can circulate evenly around each piece and be sure to flip the pieces over halfway through cooking.
  • A meat thermometer is the best way to tell if the chicken is cooked to the proper temp (this also prevents overcooking). Chicken should read 165°F at the thickest part of the drumstick.
  • Keep leftover air fryer chicken drumsticks in a covered container in the refrigerator for up to 5 days and reheat them in the air fryer. Or pop them into the freezer in zippered bags for up to 3 months and reheat them from frozen in the air fryer.
