How to Make Stuffed Avocados in the Air Fryer

These are so simple to prepare and cook!

  1. Prepare the ground beef mixture (per the recipe below). 
  2. Prep the avocado and scoop out a little of the avocado to make the shell bigger.
  3. Brush with oil and season, fill with beef mixture and sprinkle with cheese.
  4. Cook avocado until the cheese is melted.

Serve warm, topped with your favorite taco toppings!

Tips for the Best Stuffed Avocados

  • To keep avocados upright in the air fryer, crumple up a little aluminum foil to make a stand to cook them on.
  • Avoid overcrowding the air fryer so the air can circulate around the food, ensuring even cooking.

Air Fryer Stuffed Avocado

Air fryer stuffed avocado is a low carb dish that is packed full of flavor!
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4 boats

Equipment

Ingredients  

  • 1 pound lean ground meat beef chicken, turkey can be used
  • ½ medium yellow onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 2 large avocados
  • ¼ cup Mexican cheese blend shredded, or more as desired

Optional Toppings

  • ½ cup lettuce shredded
  • ½ cup diced tomatoes diced
  • ¼ cup red onions diced
  • ¼ cup cilantro leaves

Instructions 

  • Place ground beef, onion, and garlic in a large skillet and cook until no pink remains. Drain any fat.
  • Add the taco seasonings along with ½ cup of water and allow it to simmer over medium low heat until most of the liquid has evaporated.
  • Cut your avocados in half and remove the pit, use a spoon and scoop out some of the avocado to make a bigger shell. Brush the avocado with olive oil and season with salt & pepper if desired.
  • Generously scoop the taco filling into your avocado halves and sprinkle with cheese.
  • Preheat the air fryer to 370°F. Place the avocado halves in the air fryer and cook 3-4 minutes or until warmed and the cheese is melted.
  • Top as desired and serve.

Notes

Homemade Seasoning Mix
  • 1 tablespoon chili seasoning  
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon dried oregano
  • salt & pepper to taste
If using homemade seasoning mix, it is recommended to add 1 small chopped tomato with the mix and allow it to simmer.
Depending on the size of your avocados, you may have extra filling. Extras can be stored in the fridge in an air tight container for up to 4 days.
