EGGPLANT Choose full, heavy eggplants with a deep purple hue. They should be free of any cuts or blemishes. This recipe can also be used for slices of zucchini!

BREADING Seasoned breadcrumbs with a little extra garlic powder give this dish an Italian flair. Panko provides a lighter, crispier coating and can be switched out for the breadcrumbs or added half and half. For low-carb breading, use crushed pork rinds and almond flour.

How to Cook Eggplant in the Air Fryer

It’s easy to make homemade breaded eggplant!

  1. In 3 separate bowls, prepare the flour mixture, breadcrumb mixture, and egg mixture.
  2. Dip the prepared eggplant slices in the flour, egg wash, then breading mix (per the recipe below).
  3. Spray with cooking spray and cook until golden brown and crisp.

For the perfect bite, serve with warmed marinara and watch them disappear.

Tips for the Best Crispy Eggplant

  • Keep slices of eggplant at the same width so they cook evenly.
  • Cook in a single layer so the crumbs can crisp.
  • You can salt each slice of eggplant before patting it dry, this is not required though. It draws out excess moisture as well as lightly seasoning it.
  • For best results, cook in batches. Place all batches into the air fryer and heat together before serving.

PRO TIP: Sprinkle on a little parmesan cheese before serving!

Air Fryer Eggplant

The air fryer makes a crispy and delicious breaded eggplant in no time.
Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes

Equipment

Ingredients  

  • 1 large eggplant
  • cup bread crumbs
  • 2 tablespoons parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • 2 eggs whisked
  • ¼ cup flour
  • marinara sauce for serving optional

Instructions 

  • Preheat the air fryer to 380°F.
  • Slice eggplant into ⅓" slices and pat dry with paper towel.
  • Mix bread crumbs, parmesan cheese, Italian seasoning, and garlic powder in a medium bowl.
  • Place whisked eggs in another bowl and flour in another.
  • Dip each eggplant slice in the flour, then the egg and finally into the bread crumb mixture. Spray each side of the eggplant with cooking spray.
  • Place in a single layer in the air fryer basket and cook for 5 minutes. Flip over and cook an additional 5-7 minutes or until golden brown and crisp.
  • Serve with a marinara sauce for dipping.
