Vortex Air Fryer Summer Squash Fritters
Ingredients
- 2 pounds yellow summer squash 3 to 4
- 1 medium onion finely chopped
- 1 cup sharp cheddar cheese shredded
- ⅓ cup cornmeal
- ¼ cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 large egg beaten
Instructions
- Remove stem and blossom ends of squash and cut them into large chunks. Place in a large saucepan and cover with water.
- Bring to a boil over medium-high heat. Reduce the heat to low, cover the pan, and cook until squash is very tender about 10 to 15 minutes. Drain thoroughly.
- In a large bowl, mash the drained squash. Add the remaining ingredients to the mashed squash and blend well.
- Preheat air fryer to 370°F.
- Spray each side of the fritters with cooking spray and place in the air fryer. Cook 12-14 minutes or until crisp on the outside and tender inside.
