Potatoes – The best potatoes for air fryer French fries are russet potatoes or baking potatoes. Russets are extra starchy meaning they are fluffy inside and they crisp up well too. Yukon gold potatoes are another great choice.

Seasonings – Leftover bacon grease or pan release can be used instead of olive oil for crispy fries. In addition to garlic powder and grated parmesan cheese, experiment with what’s in the pantry like steak seasoning, taco seasoning, or even ranch seasoning! Unlevel these fries by drizzling on truffle oil or serving them with a lemon wedge and fresh parsley sprinkled on top.

  1. Prepare potatoes per recipe directions (below).
  2. Toss fries with oil and salt and cook in the air fryer basket until they reach the desired doneness.
  3. Meanwhile, pulse the sweet chili ketchup ingredients in a food processor until smooth, and refrigerate in a container with a tight-fitting lid until ready to use.

Pro Tip!

By giving the potatoes a soak in cold water, it helps remove the starches from the potatoes making them extra crispy!

Reheating Fries in the Air Fryer

Keep leftover garlic parmesan French fries in a covered container in the refrigerator for up to 4 days. Reheat them in a single layer in the air fryer, shaking the basket every couple of minutes so they are evenly heated (spray with a little olive oil spray for extra crispiness, if desired).

Air Fryer Garlic Parmesan Fries

These Air Fryer garlic parmesan fries are the perfect dippable snack, side dish, or apptetizer.

Equipment

Ingredients  

For the French Fries

  • 2 medium russet potatoes
  • 1 teaspoon olive oil or olive oil spray, see notes
  • ½ teaspoon salt
  • ¼ cup parmesan cheese
  • 1 teaspoon garlic powder

For the Sweet Chili Ketchup

  • ½ cup ketchup
  • 4-5 large basil leaves (about ¼ cup)
  • 2 tablespoons sweet chili sauce
  • 1 clove garlic minced

Instructions 

For the French Fries

  • Fill a large bowl with ice water. Slice the potatoes into ¼” matchsticks. Place the cut fries in the ice water while you slice the rest of the potatoes.
  • Remove the fries and pat them dry with a paper towel. Toss the fries with olive oil and salt.
  • Place the fries in the air fryer and cook at 365°F for 7 minutes.
  • Stir the fries, making sure none of them have stuck to the bottom. Turn the heat up to 400°F and cook the fries for an additional 7-10 minutes, or until they are your desired doneness.
  • Remove the fries from the air fryer and toss them with the parmesan cheese and garlic powder.

For the Sweet Chili Ketchup

  • Add the ketchup, basil, sweet chili sauce, and garlic to the bowl of a food processor. Pulse until smooth. Transfer to an airtight container and store in the fridge until ready to use. 

Notes

I highly recommend using russet potatoes in this recipe. I peel the sides of the potato, but not the tops to give them a “rustic” look. 
I like using olive oil spray in this recipe (2-3 pumps), but if you don’t have any, standard olive oil will work just as well. 
Freshly grated parmesan is always preferred but use whatever you have on hand. 
To keep the fries warm, place them on a sheet pan and put them in a 225°F oven for up to 1 hour.
Storage: Leftovers will keep in the refrigerator for up to 4 days.
