Ingredients and Variations
POTATOES: Any leftover potato can be used for this recipe. However, russet potatoes are the best for this soup, as they help to thicken the soup. Waxy yellow potatoes like Yukon gold also work well.
BASE: The creamy base of this soup comes from combining cheese and milk, or cream for a richer version! To help the cheese melt, be sure to shred it before adding it to the soup. This recipe calls for simple cheddar cheese, however, if a sharper taste is desired, then experiment with fontina gruyere or swiss.
BACON: This recipe calls for bacon bits. However, air fryer bacon can also be used. Cook some bacon in the air fryer, break it into pieces, and then sprinkle it into the soup like bacon bits. Have leftover bacon from brunch? Break it up and sprinkle it on top!
How to Make Cheesy Potato Soup
Using the soup setting on your blender you’ll have warm, delicious soup ready in minutes.
- Place everything in the blender, except the bacon bits.
- Start the blender on low and then increase to high (per recipe below).
- Once it reaches your desired consistency, top with bacon bits and serve!
To soak up every last drop of this yummy soup, we love to serve it with a slice of cheese bread or even a grilled cheese sandwich!
This recipe works as an Ace Blender potato soup or in a Blendtec, Vitamix, or other high-powered blenders with a soup setting.
If your blender doesn’t have a soup setting, don’t worry you can easily heat this soup up on the stove!
- Add all ingredients into the blender, reserve the bacon bits.
- Blend until it reaches your desired consistency (it will thicken up as it heats!)
- Pour into a pot and heat on medium-high until heated through.
Still equally as delicious, so be sure to serve with garlic bread or a dinner roll to soak up every yummy bit!
How to Store Potato Soup
FRIDGE: This soup is best stored in the refrigerator in an airtight container. It will last for 3-4 days. When reheating, add a splash of cream (or milk) and some shredded cheese to help refresh the flavors. Don’t forget to top with extra bacon bits!
FREEZER: Potato soup does not freeze well. Potatoes are just not friendly with the freezer. It can become dry after thawing, and soups that are made with milk (or cream) tend to lose their creaminess once frozen. So it is best to enjoy this one within the first few days after preparing!
Tips for the Perfect Potato Soup
Since this recipe calls for blending the soup, then peeling them would be a good idea. The skins don’t always break down in the blender.

- 2 cups milk
- 1 russet potato baked
- ½ cup cheddar cheese shredded
- ¼ onion medium diced
- 2 tablespoons bacon bits
- ½ teaspoon thyme
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Place milk, potato, cheese, onion, and seasonings into the blender.
- Secure lid and start the blender on the Soup setting on low and increase to the highest speed.
- Blend for 8-10 minutes or until steam starts to escape from the vents.
- Once desired thickness is reached stir in bacon bits and serve.
