Using plastic wrap, cover a cutting board or another flat surface for rolling the dough. If you have surgical gloves, you can use them to roll the dough without it sticking to your fingers. Otherwise, grease your hands with vegetable shortening for the same reason.

Pinch off a chunk of dough about 1/3 cup in size roll it into a rough cylinder between your hands. Place this on your plastic-wrapped or non-stick surface and use the fingers and palms of both hands to roll the dough to form a 1/2 inch diameter cylinder that is about 14 to 16 inches long if you are going to make twisted pretzels. If you are going to make stick pretzels, your cylinder can be shorter and thicker.

For twisted pretzels make a 2 1/2 inch diameter loop in middle of a strand of dough, cross the ends of the dough strand to close the loop and fold the ends up to either side of the loop to complete the twisted pretzel shape.

We found that this method was less frustrating than a full twist because it reduced the breakage of the strands.

Lay the pretzel on a sheet of parchment paper lining a rack. Since these expand during baking, leave plenty of room between them. You can fit two per rack. Repeat this process until you have all your pretzels made. This recipe makes about 10 to 12 pretzels.

To make the egg wash for the pretzels beat one egg plus 1 tbl water in a small bowl. Brush the surface of each pretzel with the egg wash and lightly sprinkle Kosher salt and sesame seeds over each one.

Preheat your Vortex to Bake at 350 F. Cook for 15-18 minutes or until the pretzels are a nice golden brown. Let the pretzels cool in the baking pan placed on a wire rack and serve warm with butter or your favorite dip.
