Combine bread crumbs, parmesan cheese, Italian seasoning, salt, and garlic powder in a medium bowl.
Place whisked eggs in another bowl and flour in another.
Dip each eggplant slice into the flour, then into the egg and finally into the bread crumb mixture. Spray each side of the eggplant with cooking spray.
Place in a single layer in the air fryer and cook 5 minutes. Flip over and cook for 4 minutes or until crispy and golden brown.
Add marinara sauce and mozzarella cheese on top and cook for another 2-3 minutes or until cheese is melted.
Notes
To remove excess moisture from eggplant slices, sprinkle a little salt on each slice and wipe off after 5 minutes. This helps to make them extra crispy!Gently press the breadcrumb coating into the eggplant slices to help it adhere to the eggplant before air frying.
