fresh or frozen okra
1
egg
beaten
¼
cup
cornmeal
⅓
cup
seasoned bread crumbs
½
teaspoon
garlic powder
⅛
teaspoon
cayenne pepper
salt & pepper to taste
cooking spray
Instructions
Rinse okra and pat dry. Cut into ½" pieces.
Combine cornmeal, bread crumbs, and seasonings in a shallow bowl.
Toss okra with the beaten egg.
Remove the okra from the egg allowing excess to drip off. Gently roll in the breadcrumb mixture pressing the crumbs.
Spray the breading with cooking spray.
Preheat the air fryer to 400°F. Add okra in a single layer and cook 5 minutes. Flip the okra over and cook an additional 5-7 minutes or until golden.
Notes
Freeze for up to 6 months in an airtight container. To reheat, preheat the air fryer to 400°F, heat through until crisp and hot.
