Mix oats, nuts, coconut, cinnamon and salt together in a large bowl.
Stir in honey, oil and vanilla until the oat mixture is well coated.
Line your air fryer basket with parchment or use a heat-safe pan that will fit in your air fryer. Add the granola and spread it out to the edges.
Air fry at 325°F for 9-13 minutes. Check the granola often and stir to ensure the mixture cooks evenly. It is done when the nuts are toasted and the oats are golden throughout.
Allow to sit in the pan to cool. Break up the granola and store in an air-tight container.
Notes
*Use your favorite nuts (or what you have on hand) in this recipe. Pecans, almonds, walnuts, and pistachios are all good options!Dried fruit can be added to your granola once it is baked.
