Instructions
Preheat the air fryer to 350°F.
Cut ¼-inch off the top of the bell pepper and scoop out the seeds.
Add the mushrooms and spinach to an air fryer safe pan and cook them until they are tender about 5-6 minutes.
Fill the peppers with the mushrooms and spinach, and crack 1 egg into each pepper.
Place the peppers in the air-fryer basket and cook for 13-15 minutes or until the egg is cooked. Season with salt & pepper.
Sprinkle the mozzarella cheese on top and cook for an additional 2 minutes or until the cheese is melted.
