In a large bowl, combine the flour, salt, garlic powder, and paprika.
In another large bowl, combine the buttermilk and egg.
Dip each chicken thigh into the dry mixture, followed by the wet mixture, and then back into the dry mix.
Place the chicken thighs into the air fryer and cook at 400F for 10-12 minutes, or until the internal temperature reaches 165F on an instant read thermometer.
The chicken can be kept warm in a 250F oven for up to 30 minutes.
Waffles
Whisk together all of the ingredients in a large bowl. Add any of your desired flavors (see notes). Cook according to your waffle iron’s instructions-- for my Belgian waffle maker, I use 1 cup of batter and cook for 3-4 minutes.
Repeat with the remaining batter.
The waffles can be kept warm in a 250F oven for up to 30 minutes.
Spicy Honey-Mustard Syrup
Combine all of the ingredients in a small bowl. Set aside until ready to use.
Notes
For a sweet waffle, add in 2 tablespoon of sugar and 1 teaspoon of vanilla extract. For a savory waffle, add in ½ cup shredded cheddar cheese and 2 tablespoons chopped green onion. You can substitute your favorite waffle mix if you don’t want to make them from scratch. I’ve found that chicken thighs offer more flavor and stay slightly moister than chicken breasts, but you can use either one. Buttermilk adds great flavor and helps soften the chicken slightly but you can substitute another milk if you have it on hand.
